The best, chewiest and most delicious cookies I have ever tasted…

“Mummy? Rory is SOOOO hungry!”

At least she doesn’t beat around the bush.

Recipe* for the best Chewy Choc Chip biscuits I have ever been successful in making**

Ingredients

Serves: 24***

250g butter, softened

220g (1 cup) caster sugar

250g (1½ cups) dark brown soft sugar

2 eggs

2 teaspoons vanilla essence

410g (3¼ cups) plain flour

1½ teaspoons bicarbonate of soda

3 teaspoons hot water

½ teaspoon salt

375g dark chocolate bits (we only used about 280g)

125g (1 cup) chopped walnuts (we used chopped peanuts and oats instead)

Method

1. Preheat oven to 180 C.
2. Cream together the butter, caster sugar and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla essence.
3. Dissolve bicarbonate of soda in hot water. Add to the mixture along with salt. Stir in flour, chocolate chips and nuts. Drop by large spoonfuls onto ungreased baking trays.

4. Bake in the preheated oven for about 10 minutes, or until edges are nicely browned.

**I obviously did not make these on my own! In fact, I just measured ingredients and Pal and Roo made them.

***This makes WAY more than 24 biscuits. We made 24 biscuits, then four giant shaped cookies (thanks to Pal’s piping skills). The recipe would easily have made 4 dozen regular sized cookies. Or 24 and then you could have frozen half the dough. Which is what I will do next time!

    I didn’t know you could freeze cookie dough. It would be good to make heaps and then defrost in batches small enough to feed the masses so they are always fresh. I just love the smell of freshly baked cookies. Yum!

  21. Thanks Daisy! My culinary skills have been lacking greatly at the moment. It’s too easy to feed Georgie a salad for dinner and then just have toast or cereal after she’s gone to bed. And lately my offerings at playgroup have all come from a packet! I might try to give these a go later on in this week- they look great! :)
