{Easy Peasy Cheater Rita} Apple & Cinnamon Scroll {plus a bonus garlic pizza recipe!).

Seriously easy stuff, kids!

I know this because I can make it with ease.

And I’m sure there are trained animals that can bake better than I can.

This will take you less than 15 minutes to throw together, and then you just have to wait for the hot baked goodies to be done!

Also, you won’t need sugar in the dough. Really.

So here we go!

Preheat oven to 180°C (fan forced).

Start with the apple. It needs to cool before you whack it on the dough.

one. One Apple, Half a lemon, 1 teaspoon ground cinnamon, 3-4 tablespoons sugar (depending on your sweet tooth).

two. Peel and slice the apple into fairly small (but not necessarily minute) pieces. In a microwave safe jug squeeze some lemon over the chopped apple. Then add the cinnamon and sugar. Cover (only just) with water.

three. Cover with cling wrap and bung in the microwave on high for about 8 minutes.

four. Take from the microwave and stir/squash with a fork and pop in the fridge to cool.

If you want your apple to be in pieces and not lazily pureed, I’d take 2 minutes off the microwave time and skip step 4.

Notes: No mixer necessary. Just combine and then turn it out onto a floured surface. It will look very much like a dogs breakfast at first (three) but it WILL come together (four) and be perfect (five). It’ll take all of 5 minutes.

You definitely do NOT need to leave this to rise. It’s for immediate use.

one. Roll out the dough – I possibly did mine too thin and long – but still delicious!

two. Pour your cooled apple mixture into the centre and spread out, leaving an edge for easy rolling and joining.

three. Roll it up, baby!

{You COULD always slice this up to make lots of mini-scrolls, but this is meant to be easy peasy cheater rita, remember!}

four. Place on a tray with baking paper (preferably one that it fits on, so your scroll doesn’t end up looking like a bent and flaccid, well,…) and bake in the oven for approximately 15 minutes (I’d check it after 10 though, just to admire your handy work and see how it’s going).

Serve on it’s own, or dust with icing sugar, or eat it all before your children figure out you’ve made it.

Now, the niftiest thing about this dough is that it can be used for ANYTHING!

I can’t even tell you how good this is!

2 tablespoons garlic, heaps of Mixed Italian Herbs, lashings of olive oil.

Into the oven at 200°C for about 12 minutes – depending once again on how thin you roll the dough.
